12 Days of Christmas Baking: Day 2 – Snickerdoodles

Welcome to day two of my 12 days of Christmas baking!   This next treat is another favorite of mine; very simple to make, and so delicious!

Day 2: Snickerdoodles

Recipe for Snickerdoodles

1/2 cup Butter, softened (no substitutes)
1 cup Sugar
1/2 tsp. Baking Soda
1/2 tsp. Cream of Tartar
1 Egg
1/2 tsp. Vanilla
1-1/2 cups whole wheat flour

1. Beat butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds. Add the 1 cup sugar, baking soda, and cream of tartar; beat until combined. Beat in egg and vanilla. Beat in as much of the flour as you can with the mixer. Stir in remaining flour. Cover and chill 1 hour.

2 Tbsp. Sugar
1 tsp. ground Cinnamon

2. Combine the 2 Tbsp. sugar and the 1 tsp. cinnamon in a shallow dish. Shape dough into 1-inch balls: roll balls in sugar-cinnamon mixture. Place balls 2 inches apart on an un-greased cookies sheet. Bake in a 375 degree oven for 10-11 minutes or until edges are golden. Transfer cookies to wire racks to cool.

Makes about 36 cookies.

Note: Since these cookies harden quite a bit when cooled, I baked them around 8  minutes, taking them out while they were still quite soft.  That way when they cooled, they still stayed chewy.  We do use a stone baking pan which may make a difference.
