
These muffins are an absolute favorite in our house!! We make ours with whole wheat flour, and they turn out wonderful, extremely delicious…and just might make you jealous.
Ingredients:

1 2/3 cup whole wheat flour

1 cup sugar

1 tablespoon pumpkin pie spice

1 teaspoon baking soda

1/4 teaspoon baking powder

1/4 teaspoon salt

2 large eggs
-
1 cup plain pumpkin (1/2 of 1 lb can)

1/2 cup (1 stick) butter, melted

1 cup (6 oz) chocolate chips
Mix together in a large bowl first six ingredients.
Mix separately the eggs, pumpkin, butter and chocolate chips. Pour wet over dry.
Pour batter in greased muffin tins, or use liners. Bake 20 minutes at 350 degrees, or until puffed and springy to the touch in center.
Note: We always triple the recipe using a 29 oz. can of pumpkin, decreasing the sugar to 2 cups (succanet sugar works well), adding ground flax seed and using 1 bag of mini chocolate chips. We sometimes use all whole wheat, and many times grind up spelt berries and oats with the wheat berries. Both turn out excellent!! After they are cooled we freeze them.
