
Oh, I just love Chicken Pot Pie! Here is the recipe I used to make this. It is SO good!
Chicken Pot Pie
Ingredients:

1/3 cup butter
-
1/3 cup flour
-
1/2 cup chopped onion
-
1/2 teaspoon salt and pepper
-
1 3/4 cups chicken broth
-
2/3 cup milk
-
2 cups cooked chicken
-
carrots (steamed first, then chopped)
-
potatoes (steamed and sliced)
-
peas (frozen)
-
2 pie crusts (store bought or homemade)
In a sauce pan, melt butter over low heat. Blend onion, flour, salt and pepper. Stir until bubbly. Remove from heat.
Stir in chicken broth and milk – beat until brought to a boil. Stir constantly – 1 minute.
Remove from heat, and gently add cooked chicken, carrots, potatoes and frozen peas.
Pour into pie crust, then cover with top crust. Slit top.
Bake @ 425 degrees for 30 – 35 minutes.
