For those of you who want a homemade or healthier alternative for Bisquick mix, here are some recipes I found on how to make it yourself:
Basic QuixMix - Can be used in most recipes calling for “biscuit mix.”
- 8 C. whole-wheat flour
- 1/3 C. baking powder
- 4 tsp. salt
- 1/2 C. sugar
- 2 C. powdered milk
- 2 C. shortening or margarine
Mix dry ingredients well. Cut in shortening until texture resembles cornmeal. A mixer may be used. Store Basic QuixMix in an airtight container in the refrigerator or freezer.
Homemade Bisquick Mix
- 10 cups all-purpose flour
- 3 teaspoons cream of tartar
- 1 1/2 teaspoons baking soda
- 2 1/2 cups vegetable shortening
- 1 1/2 tablespoons baking powder
- 1 3/4 cups powdered milk
In a large bowl, sift together all dry ingredients. Blend well. With butter knives or a pastry blender, cut in the
shortening until evenly distributed. Mixture will be rough in texture. Put into an airtight container or large zip baggies. Label. Store in a cool, dry place. Use within 10-12 weeks. Makes about 14 cups.
Variation: Use 5 cups all-purpose flour and 5 cups whole-wheat flour instead of 10 cups all-purpose flour. Increase baking powder to 4 tablespoons.
Also try Hodgson Mill Whole Wheat Insta-Bake Mix if you still want a healthier, but quicker alternative.
