I know what you’re thinking…another breakfast for dinner? But who says it has to be for breakfast only?
Here is a meal I made for my family just the other day… Bisquick Egg Casserole and Breakfast Cake with rasberry/blueberry iced tea. (Recipes listed below.)

Bisquick Egg Casserole:

6 eggs, beaten
-
3 cups milk
-
1 cup Bisquick
-
1 cup chopped onion
-
1/2 cup butter
-
4 cups shredded cheese (I would add less next time)
-
2 cups chopped ham (I used bacon)
-
dash pepper
Saute onion in butter. Add milk to beaten eggs; stir in Bisquick, onion, cheese and ham. Bake in greased 9×13 pan at 350 degrees covered for 30 minutes; uncover and bake for 15 minutes.
Thank you Grandma for this recipe! It was so quick and easy, and very delicious!

Herbal Raspberry/ Blueberry Iced Tea:

4 Celestial Seasonings Raspberry Zinger tea bags

4 Celestial Seasonings Blueberry Zinger tea bags
-
4 cups apple juice
Steep the 8 tea bags in 4 cups of boiling water for about 10 minutes. Discard the tea bags. Combine the tea with the apple juice and refrigerate until cold. Serve over ice and enjoy!
I personally am not a tea drinker, nor do I really like tea, but this one I loved!
